Panino vegetariano con zucchine e peperoni

Per un pranzo veloce da portare in ufficio un buon panino vegetariano con zucchine e peperoni grigliati.

Non sempre i panini devono essere farciti solo con salumi e formaggi, anche le verdure grigliate sono adatte per un pranzo o uno spuntino sano.

Preparare le verdure in anticipo e poi farcite il panino magari utilizzando del pane casereccio a fette o un ciabatte o la ciriola.

Ingredienti:
1 ciabatte o 2 fette di pane casereccio
1 zucchina
1 peperone preferibilmente rosso
50 gr di formaggio a fette
una foglia insalata
olio extravergine di oliva q.b.
sale q.b.

Preparazione:
Lavare le zucchine e i peperoni poi tagliate le prime a fette i secondi a falde eliminando i semi e i fili bianchi interni.
Grigliate le verdure da entrambi i lati, trasferite le verdure su di un piatto.
Tagliate il pane a metà e sulla stessa griglia in cui avete grigliato le verdure fate tostare anche il pane per 2-3 minuti. per poi farcirle con zucchine, formaggio, peperoni e insalata.
